Hot stone table top cooking.
Pierrade receives its name from the word "pierre." Not only is it your stereotypical French name, but it also means "rock." The main focus of the Pierrade is meat, as this is what will make up the majority of the dish. You have many options available to you... beef, chicken, lamb, shrimps, scallops, etc. All meats are cooked on very hot granite stone, pretreated in olive oil, herbs & garlic. To enhance the flavor, the Pierrades are flamb?at the table, wowing the guests each time they order it. Pierrade is an elegantly rustic form of cooking common in France. The stone imparts a nice, unique flavor and allows fish or meat to become crisp on the outside, with chunky marinade staying intact throughout the cooking process.
